Culinary Technique Demonstration at Williams-Sonoma
Photos from Chef Alan’s demonstration at Williams-Sonoma. Attendees learned the principles behind Chef’s famous Li Hing Mui Dressing, plus his Ko Choo Jang Sauce and red and yellow ketchups. All four items showcased Chef Alan’s philosophy of “Slot In, Slot Out” (replacing ingredients with others to create an entirely new dish) and the concept of balancing flavors: sweet, spicy, salty, acid.

Chef Alan Wong will conduct a culinary technique demonstration, drawing from dishes in his newest cookbook, The Blue Tomato: The Inspirations Behind the Cuisine of Alan Wong, on Saturday, October 8 at the Williams-Sonoma store at Ala Moana Center. Chef Alan will discuss culinary principles from The Blue Tomato and demonstrate various techniques utilized in his recipes. The demonstration will last approximately 40 minutes and will be followed immediately by a book signing session; copies of The Blue Tomato will be available for purchase at Williams-Sonoma.
