Chef Alan in New York

At the beginning of March 2011, Chef Alan Wong and Chef George Mavrothalassitis, both James Beard Award-winning chefs, traveled to New York to present a Chefs of Aloha dinner at the James Beard House (March 9, 2011).

While in New York, Chef Alan taped a segment with Epicurious.com’s Tanya Steele for ABC News’ Chef’s Table program.

In the first video clip, Chef demonstrates how to make his ‘Ahi Poke Stack, a multi-part recipe found in The Blue Tomato. He and Chef Mavro also sit down to chat with Tanya Steele about Hawai‘i Regional Cuisine and the other dishes the chefs demonstrated on the program.

In the second clip, Chef Alan has Tanya Steele assist him in making “Da Bag”—a dish anyone who’s ever eaten at his restaurant has probably seen carried through the dining room, if they haven’t sampled it for themselves. He also talks about The Blue Tomato.
